Lindley Mills Flour is milled in North Carolina, Certified Organic, and Non-GMO

We take pride in providing 100% organic, non-GMO flour to our customers just like our founder, Thomas Lindley did in 1755.  We believe that organics are safer, healthier, and more sustainable. We are transparent about our products, labeling, and business practices because our customers want to know—and deserve to know—where their food comes from, and what's in their food. We believe that every consumer has the right to make an informed choice based on that knowledge.  

Certified Organic

At Lindley Mills, our organic flour packaging bears the 100% Certified Organic seal as a symbol of transparency. As a Certified Organic facility, we undergo a yearly inspection through Oregon Tilth.  Learn more about our organics here

Third-Party Certified

We are also third-party certified through the British Retail Consortium, an independent organization, for standards of safety, quality, and performance.  This certification is one of the most stringent tests, and assures our products are of the highest possible quality. 

Non-GMO

We know GMOs are a hot topic, so let us make it easy for you:

1. All Lindley Mills flours are non-GMO; GMO wheat is not approved for commercial production or sale in the United States and North America.

2. The definition of organic excludes GMOs, therefore any certified organic products cannot also be GMO.

2. Our organic wheat is sourced from American farmers. Our organic products are carefully sourced and certified so that our customers can rest assured they aren't eating GMOs when they use Lindley Mills flour.

As part of our ongoing commitment to support local farmers and artisan bakers in our area, we have been working with several North Carolina organic farmers to grow hard red winter wheat varieties bred to adapt to North Carolina's climate. The 100% organic hard red winter wheat variety has produced the yields that farmers look for as well as the protein quality that professional bakers desire. We are proud to be able to offer North Carolina Bread Flour made out of 100% NC Wheat. 

Traditionally, in North Carolina soft wheat has been the wheat crop of choice for it's higher yield. It grows better in this warmer and more humid climate and explains the tendency of our grandmothers to whip up a batch of biscuits before a crusty artisan loaf. Today soft wheat still grows more easily in North Carolina and we incorporate it into our mill at every opportunity. Just like our ancestors would have ground the grain of their neighbors, we use as much local grain as possible in all of our products.

You cannot mistake Super Sprout™ sprouted whole grain wheat flour for regular whole wheat flour. Super Sprout™ has a different:

NUTRITION: The nutrition of Super Sprout™ is enhanced. The Sprouting Process

At Lindley Mills, we utilize a proprietary process to sprout, stabilize, and mill our organic whole grain wheat into the soft, silky-fine baking flour we call Super Sprout™.  

Before we begin sprouting our wheat at Lindley Mills, we test it in our state-of-the-art lab for protein, moisture, ash, pathogens, and falling number. We then select the best wheat, clean it to sprouting grade, and add water, while controlling the environment (temperature, time, atmosphere, light) to effect optimum sprouting.

Our goal is to start the wheat's natural germination process, control it (testing throughout the process), stabilize at optimum sprouting (in order to trap the sprouted wheat's most beneficial nutrients), and then mill into a viable baking flour. 

Through this practice of carefully controlled sprouting, stabilization, and milling, we can unlock wheat's full potential of flavor, functionality, and nutrition.

Directions for use:

Super Sprout™ can be used as a 100% replacement for white flour and whole wheat flour in all of your favorite recipes. Simply substitute with a 1:1 ratio and add 10% to 20% more water than your recipe calls for.  Check out some of our favorite recipes below!
