Ingredients

Dry Ingredients

Wet Ingredients

  • 4 cups Warm Water (almost)
  • 1/2 cup Honey OR a mix of molasses, maple syrup, and honey
  • 3/4 cup Starter (1:1 hydration)

Directions

  1. Mix Dry Ingredients together.
  2. Mix Wet Ingredients together.
  3. Add wet slowly to dry. Do 'stretch n fold' kneading.
  4. Cover and either set in the refrigerator or on the counter overnight.
  5. In the morning 'stretch n fold' to get rid of big holes.
  6. Form loaves for each well-oiled 9.25x5.25 pan. Cover with a lightweight tea towel and put in the oven with the oven light turned on.
  7. Let rise (proof) until double.
  8. Take out of the oven, and preheat oven to 350°F.
  9. Score the top of each loaf and bake for 40 minutes.
  10. Enjoy!!
