
Lindley Mills, Inc. produces many different 100% organic flours and mixes under the Lindley Mill label as well as private label specialty flours milled to stringent customer requested specifications.
There is an old miller’s axiom that states “You can’t make good flour from bad wheat, but you can make bad flour from good wheat.” So, good flour begins with good wheat. 35 years of organic milling have gifted us with a dedicated group of growers from all across the US. We purchase wheat from North Carolina, Virginia, South Carolina, Ohio, Michigan, Illinois, Texas, Oklahoma, Kansas, Nebraska, South Dakota, North Dakota, etc.
These multiple growing locations provide a buffer from regional weather issues and a flexibility to meet our flour expectations. Our wheat purchases are guided by performance characteristics rather than by region or variety. Each wheat lot is extensively tested in our lab and approved before it ever leaves the farm. The wheats are carefully selected and blended at the mill to achieve the high standards required of the finished flour.
Our ability to source wheat from diverse geographical regions allows our organic flours to be consistent and performance driven. By testing and blending the wheats to specification we can better control the flour, rather than just accepting whatever flour the wheat makes.
